At The Pem this May, spring ingredients take centre stage. Our menus are deeply rooted in the rich traditions of British cuisine, reinterpreted with contemporary precision and finesse. A standout this season, our slow-poached Cornish cod is served with roasted cauliflower, hazelnut pesto, and shaved English black truffle, for an indulgent main course.
To elevate the experience further, our sommelier recommends a glass of ‘Les Fondraux’, a Vouvray Chenin Blanc from Domaine Champalou in the Loire Valley. With elegant acidity and layered texture, it cuts beautifully through the richness of the velouté and complements the earthy depth of the truffle.

Inspired by the blooms of spring and in celebration of the Chelsea Flower Show, The Hedgerow introduces The Morello Club, a floral twist on the pre-Prohibition Clover Club. Centred on Morello cherry, it’s a nod to early 20th-century sophistication and opulence. It’s the perfect aperitif before heading into The Pem’s softly lit dining room.
