Unveiling The Spring Delights

As Spring begins to awaken, here at The Pem we’re unveiling our eagerly anticipated Spring menu from Chef Sally and Head Chef Jennifer Collins. Nestled in the heart of London at Conrad London St. James, our new menu showcases the freshest seasonal and local ingredients from trusted British suppliers. From the delicate flavours of asparagus to the richness of freshly caught seafood, each dish is crafted to delight the senses and evoke the essence of Spring. Sally has taken everything The Pem is about – the very best of British – and distilled it into an inventive menu that showcases her passion for championing seasonal produce.


Delectable Starters

To start, guests are treated to tantalising starters such as a ‘Charred Cornish Mackerel’, combining the smoky flavours of charred mackerel with the tangy sweetness of forced Yorkshire rhubarb and earthy compressed alexanders and Douglas fir. The ‘Wye Valley Asparagus Tartlet’ offers a delightful medley of flavours, with tender asparagus nestled in a tartlet and complemented by the creamy richness of Stichelton cheese and a refreshing salad of fine herbs. Indulge your palate further with the ‘Barbecued Scottish Langoustine’ with new season peas, lemongrass, and English wasabi, or savour Jennifer’s iconic ‘Cornish Crab Crumpet’, featuring oat crumpets and brown crab hollandaise, for a delightful spin on a much-loved flavours.


Sumptuous Mains

The mains showcase an array of enticing options to suit every palate. Feast upon the ‘Roast Herdwick Lamb Cannon’, accompanied by cockle popcorn and laverbread, a dish that epitomizes the essence of spring, offering a modern twist on traditional Spring roast lamb. Meanwhile, the Poached Cornish Cod Loin, served with fondant onions, baby gem lettuce, and lardo, presents a culinary masterpiece that celebrates the bounty of the sea and the season. The Stuffed Globe Artichoke is a vegetarian delight, with tender artichoke hearts stuffed with seasonal wild garlic velouté, topped with sunflower seeds and barley.
