Renowned for their passion and care for the craft, this cooperative of family-run farms is committed to traditional, sustainable farming methods. Their veal is a staple of one of The Pem’s finest starters: the Rose Veal Carpaccio with violet artichoke, barigoule, and black garlic cream.

Flying Fish Seafood
This Cornwall-based supplier is committed to responsible sourcing from local day boats, providing premium seafood fresh from the Cornish coast from sea to plate in under 48 hours. You’ll find their catch, a true celebration of British seasonal ingredients, in our Hand-Dived Orkney Scallop, served with enoki mushroom, aged white balsamic, and crispy chicken skin.

Wiltshire Truffles
Truffles that need no introduction. These exquisite delicacies, showcased in our Poached Cornish Cod Loin with roast cauliflower, English truffle, and hazelnut pesto, are hand-picked by the passionate and knowledgeable team at Wiltshire Truffles.
